The CICLOPE Panettone by Peluso 1964 is the fruit of three generations of craftsmanship in Modica. Thanks to a slow 36-hour fermentation with sourdough starter, the dough achieves extraordinary softness and an enveloping fragrance reminiscent of the warmth of a wood-fired oven. Inside, faint streaks of Modica IGP chocolate (min. 12 percent cocoa) alternate with luscious pieces of semi-candied berries (8 percent), giving each slice a taste contrast between the velvety sweetness of the chocolate and the delicate acidity of the red fruits. The surface is decorated with a milk chocolate glaze and topped with dark chocolate chips (8 percent), which, as they slowly melt, further enhance the flavor of this unique dessert.
