Baglio delle Saline dei Premiati Oleifici Barbera nasce nella Sicilia occidentale, tra gli uliveti delle Valli Trapanesi. È un extravergine DOP dal carattere mediterraneo netto: fruttato medio, profumi erbacei e una piacevole presenza di amaro e piccante che dà ritmo al piatto.
Caratteristiche del prodotto
- Denominazione: DOP Valli Trapanesi.
- Cultivar: Cerasuola, Biancolilla e Nocellara del Belice.
- Zona di provenienza: Sicilia occidentale.
- Raccolta: brucatura a mano nel mese di novembre.
- Estrazione: a freddo a ciclo continuo entro 12 ore dalla raccolta, con decantazione naturale e travasi.
- Filtraggio: mediante teli naturali.
- Aspetto: verde con riflessi giallo oro.
- Profilo sensoriale: aroma netto di oliva con toni erbacei e aromatici; gusto fruttato medio con amaro e piccante evidenti.
