Santa Tresa Organic Grillo Brut Sparkling Wine
Santa Tresa Grillo is an organic Sicilian sparkling wine made from Grillo grapes grown in the estate in Vittoria, in the Ragusa province. Produced using the Charmat method, it is distinguished by its straw-yellow color with golden reflections, fine perlage, and a pleasant freshness.
On the nose, it expresses scents of citrus, flowers, and yellow-fleshed fruit. On the palate, it is soft, balanced, and bright, with a lively acidity that makes every sip clean and harmonious.

Winemaking
After a soft pressing, the must undergoes the first fermentation in temperature-controlled steel tanks for approximately 8–10 days. The second fermentation takes place in an autoclave, where the delicate perlage and the fresh aromas typical of Grillo develop.
Recommended pairings
Ideal as an aperitif, it accompanies seafood appetizers, mollusks, crustaceans, light fried foods, fish, tempura vegetables, and delicate cheeses. Serve chilled, preferably at 8–10 °C.

The Santa Tresa winery is located in Vittoria, in southeastern Sicily. The estate enhances Sicilian native grape varieties through organic viticulture that is attentive to the territory and biodiversity.
