Il Cioccolato di Modica IGP Tradizionale di Antica Dolceria Rizza racconta una delle lavorazioni dolciarie più riconoscibili della Sicilia. La massa di cacao e lo zucchero vengono lavorati a bassa temperatura, secondo il metodo tipico modicano, per ottenere una tavoletta dal gusto intenso e dalla texture naturalmente granulosa.
È un cioccolato essenziale, diretto, senza coperture aromatiche: il profilo è dominato dal cacao, con una consistenza ruvida e cristallina che lo distingue dal cioccolato lavorato con tecniche più moderne e vellutate.
