Il Cioccolato di Modica IGP agli Agrumi di Sicilia dell'Antica Dolceria Rizza è una prelibatezza artigianale che unisce la tradizione cioccolatiera modicana con la freschezza degli agrumi siciliani. Questo cioccolato si distingue per la sua lavorazione a freddo, che preserva le caratteristiche organolettiche del cacao e conferisce una texture granulosa.
Caratteristiche principali
- Ingredienti selezionati: Massa di cacao, zucchero di canna, scorze di agrumi siciliani essiccate e macinate finemente.
- Processo di lavorazione tradizionale: La lavorazione 'a freddo' del cioccolato di Modica prevede che la massa di cacao venga riscaldata a una temperatura massima di 40-42°C, permettendo allo zucchero di mantenere la sua struttura cristallina e conferendo al prodotto la consistenza granulosa.
- Aroma e gusto: L'aggiunta di scorze di agrumi siciliani dona al cioccolato un profumo intenso e un sapore fresco e agrumato, che si sposa bene con le note del cacao.
