What is the manna?
Manna It is a sugary lymph extracted from the cortex of some species of ash. This lymph, once exposed to the air, solidifies forming a white and sweet substance. Manna collection is a millennial tradition, practiced mainly in the areas of Castelbuono And Pollen, in Sicily.
Collection between July and September, local farmers perform small engravings with skill - Chiamate "Ntacche"—Sulla Cortex of the Sicilian ashsini.
