combined with the mother yeast, helps to enhance the flavors, allowing, therefore, a natural leavening that lasts 36 hours. This process guarantees, consequently, a soft consistency and an unparalleled fragrance, making every bite a journey into the heart of Sicily.

Peluso's Elegant line is therefore characterized by a special natural leavening, which requires a long fermentation process. This technique, which dates back to ancient traditions, involves the use of a "fermented dough core" to which water and flour are then added progressively. The absence of preservatives not only makes the product healthy, but also ensures a surprisingly long shelf-life, maintaining high organoleptic characteristics.

The story of Peluso begins, therefore, in 1964, in a small artisan laboratory in Modica, pearl of the Sicilian territory. The experience of three generations of master pastry chefs contributes, therefore, to making each product a true work of confectionery art.
