Ingredients for the Shortcrust Pastry:

• 250 g of flour
• 125 g cold butter
• 100 g of sugar
• 1 egg
• 1 pinch of salt

• 2 untreated lemons

Preparation:

1. In a bowl, mix the flour, sugar and pinch of salt.
2. Then, add the cold butter cut into cubes and mix until you obtain a sandy mixture.

4. Then wrap the dough in cling film and place in the refrigerator for at least 30 minutes.
5. Meanwhile, peel the lemons and grate the zest.
6. Preheat the oven to 180°C.
7. Roll out the shortcrust pastry on a base of baking paper and place it inside a tart pan.
8. Then pour the Fiasconaro Sicilian Lemon Marmalade into the tart and level it well.
9. Sprinkle the grated lemon zest over the jam.
10. Bake for 30-35 minutes or until the tart is golden and crispy.
11. Let cool before serving.
