Eggplant Caponata - Sicilian Red (190 g)
Bring to the table the true flavor of the Sicily with the Eggplant Caponata Sicilian Red: a flavorful mix of eggplant, tomatoes, celery, onions, olives and capers, prepared according to a traditional island recipe. Soft to the point and rich in Mediterranean flavors, it is perfect as an appetizer, side dish or topping for crostini and bruschetta.
A dip in Sicilian tradition
Caponata owes its name to an ancient preparation using capone fish (lampuga), then cheap and widespread, which the less well-off cooked along with fried vegetables and preserved in sweet and sour sauce. Over time, the fish disappeared from the recipe, leaving room for vegetables, always dipped in the typical sweet-and-sour sauce that enhances the flavors and ensures natural preservation.
True caponata is distinguished by the care taken in its preparation: each ingredient is fried separately in sunflower seed oil to preserve its authentic taste, then blended with a sweet-and-sour sauce, a perfect balance of sugar and wine vinegar. The oil, a key element, is chosen with special care to ensure fragrance and quality, so much so that one only has to open the jar to immediately perceive its freshness.

The role of oil: balance and fragrance
Oil is a key element in our Eggplant Caponata: not only does it enhance the authentic flavors of the vegetables, but it gives that smooth, velvety texture that melts on the palate. We use only the highest quality oil-not for frying, but as the actual ingredient in the dish. The right amount, carefully chosen, allows the Mediterranean aromas to be released every time you open the jar, immediately offering an intense fragrance that speaks of Sicily.
