Thanks to a slow fermentation of 36 hours with mother yeast, the dough reaches an extraordinary softness and an enveloping perfume reminiscent of the heat of a wood oven. Inside, soft streaks of Modica IGP chocolate (min. 12 % of cocoa) alternate with delicious pieces of semi -condemned berries (8 %), giving each slice a contrast of taste between the velvety sweetness of chocolate and the delicate acidity of the red fruits. The surface is decorated with a milk chocolate glaze and covered with dark chocolate chips (8 %) which, dissolving slowly, further enhance the flavor of this unique dessert.
