La Artisan Pasta "Calamarata"is a traditional Neapolitan pasta format, characterized by wide rings that resemble the shape of squid. This artisanal version is made with durum wheat semolina of the ancient variety Russello, grown in Sicily using organic methods. Bronze drawing and slow drying at low temperature give the pasta a rough surface, ideal for retaining sauces, and preserve the organoleptic qualities of the wheat.
